Dovga

A soup of yogurt and herbs, drunk cold in summer and hot in winter.

Dovga is made by thinning yogurt with water and cooking it with rice, chickpeas and plenty of herbs — dill, coriander, spinach and mint — stirring constantly so the yogurt does not curdle.

In summer heat it is served cold as a refreshing drink, in winter as a hot soup, and it is said to aid digestion after heavy meals.

Dovga belongs on Nowruz and wedding tables; in some regions small meatballs are added.
