Baursak
Round or square pieces of dough fried in hot fat — the constant bread of the Kazakh table.

Baursak is made from leavened or unleavened dough cut into small pieces and fried in hot fat in a cauldron — soft inside and golden outside.
In a Kazakh home the first things placed on the table are tea, baursak and kurt, as a sign of hospitality; at weddings and holidays a mountain of baursak is piled in the middle.
Similar fried breads exist in Turkmen, Kyrgyz, Mongolian and Bashkir cuisines.
