Dograma
A festive dish of torn bread, meat and onion soaked in hot broth — the most famous dish of Turkmen cuisine.
Dograma means "chopped" in Turkmen. A broth is cooked with mutton, tomatoes and onion; tandyr bread is torn into small pieces by hand, topped with chopped meat and onion, and the boiling broth is poured over it all.
Tearing the bread is often a shared task, with hosts and guests sitting around the cloth together — a symbol of unity and abundance.
Dograma is cooked for religious holidays, charitable gatherings and ceremonies, and is a relative of the Kazakh and Kyrgyz beshbarmak.
