Dolma

Minced filling wrapped in vine or cabbage leaves or stuffed into aubergines, tomatoes and peppers. The tradition of making and sharing it has been UNESCO heritage since 2017.

Dolma is made by wrapping a mixture of minced meat, rice, onion and herbs in leaves or stuffing it into vegetables. The best known are vine-leaf dolma, cabbage dolma and "three sisters" — aubergine, tomato and pepper.

It is usually served with yogurt and garlic. Making it is a shared ritual for family and neighbours, and small, neatly rolled dolma are a mark of a good cook.

"Dolma making and sharing tradition, a marker of cultural identity" was inscribed on UNESCO's intangible heritage list in 2017.
