Ganja dovga
The pride of Ganja's kitchen: dovga cooked with rich buffalo yogurt and six kinds of herbs, drunk cold in summer and hot in winter.

Dovga is made by thinning yogurt with water and cooking it with rice and plenty of herbs; some regions add chickpeas. It is stirred constantly with a wooden spoon until it boils so that the yogurt does not curdle.
Dovga is the most famous dish of Ganja's cuisine, and people in Ganja take pride in theirs. What sets it apart is rich buffalo yogurt and six kinds of herbs — dill, coriander, mint, spinach and others.
In Ganja dovga is often drunk from a glass or cup without bread, and many like it with onion. In summer heat it is a cooling drink served cold; in winter it becomes a hot soup.
Dovga belongs on Nowruz and wedding tables; in some regions small meatballs are added.
