Ganja tandir bread
Bread baked on the hot wall of a clay tandir — the staple of Ganja's table. Tandir craftsmanship and bread baking became UNESCO heritage in 2024.

The tandir is an oven built of clay; masters make two kinds — sunk into the ground or standing above it. Dough is shaped, rolled out and slapped onto the oven's hot inner wall, where it bakes golden in a few minutes.
Around Ganja tandir bread is the staple of the everyday table. Sangak, a bread baked in Ganja since old times, is sometimes even called "Ganja bread".
Tandir bread keeps well and is eaten over several days. By tradition, hot bread is offered first to children and guests, which is believed to bring prosperity to the home. The craft passes down within families, learned by watching and doing.
"Tandir craftsmanship and bread baking in Azerbaijan" was inscribed on UNESCO's Representative List of the Intangible Cultural Heritage of Humanity in 2024.
