Nauryz kozhe

A soup of seven ingredients cooked only at Nauryz — a symbol of the new year's abundance.

Nauryz kozhe must contain seven ingredients: water, meat, salt, fat, flour or groats, grain (wheat, rice or millet) and milk or yoghurt. The number seven stands for the days of the week and seven blessings.

Large cauldrons of kozhe are cooked and shared with neighbours and guests; tasting it in at least seven homes is considered lucky. Meat saved from the winter is added as a farewell to the old year.

In Kazakhstan Nauryz is a public holiday on 21–23 March.
