Pide

A boat-shaped open dough topped with minced meat, cheese, egg or kavurma and baked in an oven; the Black Sea pide is especially famous.

Pide dough is rolled out long, its edges folded to make a boat shape, and the filling placed in the middle. The best-known kinds are kıymalı (minced meat), kaşarlı (cheese), kuşbaşılı (diced meat) and yumurtalı (egg).

In the Black Sea region — Samsun, Trabzon, Rize and Bafra — pide is baked with plenty of butter, and every city has its own shape; Konya's etli ekmek is very long and thin.

During Ramadan a special round Ramazan pidesi is baked across Türkiye — the main bread of the iftar table.
