Piti

Shaki's famous stew of lamb, chickpeas, chestnuts and saffron, cooked in a clay pot and eaten in two stages.

Piti is cooked in an individual clay pot for each person. Lamb, tail fat, chickpeas, chestnuts, onion and dried sour plums go in and simmer for hours on a low flame; saffron is added at the end.

It is eaten in a special way: first the broth is poured over pieces of bread in a bowl and eaten, then the meat, chickpeas and chestnuts are mashed and eaten with sumac as a second course.

Piti is the symbol of Shaki — no visitor leaves without tasting it and Shaki halva.
