Kuyrdak
A Kazakh dish of liver, heart, kidneys and meat from a freshly slaughtered animal, fried with onion.

Kuyrdak means "fried". It is the first dish cooked after an animal is slaughtered: liver, heart, kidneys, lungs and some meat are diced and fried with onion in their own fat in a cauldron.
In nomadic life it was the shared meal of neighbours and relatives who helped with the slaughter. It can be made with mutton, horse or camel and is the taste of the pre-winter sogym ritual.
Kuyrdak is served with potatoes or bread and tea, and resembles the liver qovurma of Azerbaijani cuisine.
