Samsa

A meat pastry baked in the tandyr, Central Asia's favourite street food.

Samsa is made from plain or flaky dough, usually filled with chopped mutton, tail fat and onion, and baked stuck to the wall of a tandyr.

It may be triangular, square or round, and in season is also made with pumpkin, potato or greens; the samsa of Khiva and Samarkand's flaky samsa are especially famous.

Sold hot at street kiosks and bazaars, it differs from the similarly named Indian samosa in being baked in a tandyr rather than fried.
