Şeftali kebab (sheftalia)

A Cypriot kebab of minced meat wrapped in caul fat and grilled over charcoal.

For şeftali kebab, minced meat is mixed with onion, parsley and spices, wrapped in thin caul fat instead of casing and grilled on skewers over charcoal.

The fat melts as it cooks, keeping the meat juicy and giving it a pinkish, peach-like colour — the name is said to come from şeftali, "peach".

Another story credits a Turkish Cypriot street vendor called "Şef Ali", whose "Şef Ali kebabı" became şeftali kebabı. Today it is loved all over the island.
