For shakarbura, rich pastry is filled with ground walnuts or almonds, sugar and cardamom, its edges folded into a crescent, and fine patterns are pinched onto it with special tweezers.

It is said that shakarbura stands for the moon, pakhlava for the stars and shorgogal for the sun — the three main sweets of the Nowruz tray.

Even, beautiful patterns show the baker's skill, and before the holiday women gather at home to make shakarbura together.
