Shubat

Fermented camel's milk — the thick, nourishing drink of southern and western Kazakhstan.

Shubat is made by adding a starter of old shubat to camel's milk and leaving it for a few days. It is thicker, whiter and richer than kumis, with a sour taste.

In Kyzylorda, Mangystau and Turkistan, where camel herding is widespread, it is an everyday drink, traditionally used for stomach complaints and fatigue.

Among the Turkmen a similar drink is called chal.
