İskender kebab
Bursa's famous dish: thin slices of döner over pide bread with tomato sauce, sizzling butter and yoghurt.
İskender kebab became known in Bursa in the second half of the 19th century under the name of İskender Efendi. His family still runs a kebab house in the city, and the name is their registered trademark.
Cubed pide is spread on a plate and topped with thinly sliced döner, then tomato sauce; sizzling butter is poured over at the table, and it is served with yoghurt and grilled peppers.
In Bursa it is often followed by grape şıra or candied chestnuts. Across Türkiye the dish is sold as "Bursa kebab" or simply "İskender".
