Gutap

A thin half-moon pastry filled with meat, pumpkin or greens, a sibling of the Azerbaijani qutab.

For gutap the dough is rolled thin, filled with minced meat, pumpkin, spinach, greens, potato or cheese and folded into a half-moon.

It is then fried in oil or cooked on a griddle, and gutaps with different fillings are among the favourites at Turkmen food festivals.

Its name and shape are very close to the Azerbaijani qutab — a sign of the shared Oghuz cuisine of the two peoples.
